Chinese New Year is around the corner. During Chinese New Year celebration, we often eat food that have symbolic meaning for good fortune, good health, prosperity, happiness etc.... and this Longevity Noodles symbolise a long and healthy life.
2020 is year of Rat, so I added cute little rats made of quail eggs for the kid, aren't they adorable? ;)
Ingredients: 2-3 servings

250g Longevity Noodles (cooked)
80g Shredded Pork/ Shabu-shabu Pork
(seasoned with 1/4 tsp Tapioca Flour, 1/2 tsp Soy Sauce, 1/4 tsp Sesame oil and a dash of pepper)
2 Prawns
(peeled and halved, seasoned with salt, pepper and sesame oil)
1/2 tbsp chopped Garlic
1 Crab Stick (shredded)
4 Shiitake Mushrooms (sliced)
Handful of Cai Xin/ Veggies (blanched)
2 Baby Corn (sliced)
Sauce:
150g *Mushroom Water/ Stock
*The water used to soak shiitake mushrooms
1/2 tbsp Oyster Sauce
1/2 tbsp Soy Sauce
1/2 tbsp Maggie Seasoning
Dash of White Pepper
1 tsp Sugar
1/4 tsp Sesame Oil
1/2 tbsp Dark Soy Sauce

Method:
1. Heat some oil in the hotplate (low heat). Stir fry garlic until fragrant. Add in mushrooms, baby corn, pork and prawn, stir fry till cooked.
2. Add noodles, gradually stir in sauce and mushroom water/ stock, mix well.
3. Stir in crab stick and veggies, mix well and serve. Decorate if desired ;)
