MINI CHOCOLATE CAKES!

A Delicious, Light, and Moreish version of one of my Favourites! Mini Chocolate Cakes! Chocolate Sponge, Chocolate Buttercream, Chocolate Drizzles!



Ingredients

Mini Chocolate Cakes
  • 175 g Unsalted Butter/Stork
  • 175 g Light Brown Sugar
  • 3 Large Eggs
  • 135 g Self Raising Flour
  • 40 g Cocoa Powder
  • 1/2 tsp Vanilla Extract
Chocolate Buttercream Frosting
  • 125 g Unsalted Butter (room temp)
  • 225 g Icing Sugar
  • 25 g Cocoa Powder
  • 1/2 tsp Vanilla Extract
  • Decoration
  • 50 g Milk Chocolate (melted)
  • 50 g White Chocolate (melted)
  • Sprinkles

Instructions
  1. Preheat your oven to 170C/160CFan and grease and flour, or cut mini circles and line the bottoms of your cups in your 12-Hole Mini Sandwich Tin!
  2. Cream together the Butter/Stork and Light Brown Sugar with an electric beater till smooth – add in the Beaten Eggs, Flour, Cocoa Powder and Vanilla and beat again for about about 20-30 seconds on a Medium Speed – it really doesn’t take too long, you don’t want to overbeat it!.
  3. Spoon into your tin evenly per cup and Bake in the oven for 16-18 minutes or until cooked through! Leave to cool on a wire rack.

These Easy Boston Cream Donuts are made with refrigerated biscuits for a quick method that will have you enjoying a fried, cream-filled, chocolate-topped donut in no time!



Ingredients

Chocolate Ganache
  • 1 cup dark chocolate chips

LEMON BLUEBERRY CHEESECAKE

This Lemon Blueberry Cheesecake is thick, creamy and flavored with tangy lemon and blueberries throughout. It sits in a graham cracker crust and is topped with a homemade blueberry sauce.

  • 2 tbsp lemon zest
  • 3 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1 1/2 cups blueberries
BLUEBERRY TOPPING
  • 1/4 cup (52g) sugar
  • 1 tbsp cornstarch
  • 2 tsp water
  • 2 cups (277g) blueberries
WHIPPED CREAM
  • 1 cup (240ml) heavy whipping cream, cold
  • 1/2 cup (58g) powdered sugar
  • 1 tsp vanilla extract
  • Lemon slices, for decorating, optional

INSTRUCTIONS

CRUST
1. Preheat oven to 325°F (163°C). Line a 9-inch (23cm) springform pan with parchment paper in the bottom and grease the sides.
2. Combine the crust ingredients in a small bowl. Press the mixture into the bottom and up the sides of the springform pan.
3. Bake the crust for 10 minutes, then set aside to cool.

Stir-fry Longevity Noodles 长寿面食谱



Chinese New Year is around the corner. During Chinese New Year celebration, we often eat food that have symbolic meaning for good fortune, good health, prosperity, happiness etc.... and this Longevity Noodles symbolise a long and healthy life. 








2020 is year of Rat, so I added cute little rats made of quail eggs for the kid, aren't they adorable? ;)








Ingredients: 2-3 servings

250g Longevity Noodles (cooked)

80g Shredded Pork/ Shabu-shabu Pork
(seasoned with 1/4 tsp Tapioca Flour, 1/2 tsp Soy Sauce, 1/4 tsp Sesame oil and a dash of pepper)

2 Prawns 
(peeled and halved, seasoned with salt, pepper and sesame oil)

1/2 tbsp chopped Garlic

1 Crab Stick (shredded)

4 Shiitake Mushrooms (sliced)

Handful of Cai Xin/ Veggies (blanched)

2 Baby Corn (sliced)


Sauce:

150g *Mushroom Water/ Stock
*The water used to soak shiitake mushrooms

1/2 tbsp Oyster Sauce

1/2 tbsp Soy Sauce

1/2 tbsp Maggie Seasoning 

Dash of White Pepper 

1 tsp Sugar

1/4 tsp Sesame Oil

1/2 tbsp Dark Soy Sauce



I cooked this longevity noodles using BRUNO hot plate, super easy and quick!

Skippy® Peanut Butter & Jelly Cups
A quick & deliciously easy recipe for Peanut Butter lovers.  Salty peanut butter with oozing strawberry jelly – what’s not to love!

Makes 12
Prep time:  10 minutes
Chilling time: 20 minutes

Ingredients
340g Skippy® Creamy Peanut Butter
50g coconut oil, melted
1 tbsp honey
75g strawberry jam



Method

1.    Line a muffin tin with 12 cupcake cases.
2.    Place the peanut butter, coconut oil and honey into a blender and blitz until the peanut butter is smooth and creamy.
3.    Now divide the peanut butter between the cupcake cases.
4.    Heat the jam in the microwave for 30-45 seconds until runny and drizzle on top of the peanut butter.  Use a toothpick to swirl the jam through the peanut butter.
5.    Place the muffin tin into the freezer for 15-20 minutes or until hardened.  Store in an airtight container in the fridge or freezer.  If frozen let sit in room temperature for 5 minutes.  Enjoy!

Nian Gao [Pressure Cooker Recipe] 椰糖年糕【简易版高压锅食谱】




Nian Gao, translated as Chinese New Year Cake is a kind of sweet sticky rice cake prepared from glutinous rice flour, sugar and water. Traditionally it is most popular eaten during Chinese New Year. It is considered good luck to eat Nian Gao during this festive season as Chinese believed eating Nian Gao has a symbolism of raising oneself taller, higher or wealthier in each coming year. 






I love Nian Gao, especially homemade, less sweet version. I usually make traditional Nian Gao at my parent's house using slow cooker. Really SLOW as I need to steam the Nian Gao for 22 hours to get a nice brown colour. When nearing Chinese New Year, my day to day routine is scheduled with back to back baking. Therefore, I used pressure cooker to shorten the steaming time. 

I'm using Song Cho Electric Pressure Cooker SC-EP5. It's ELECTRIC, means the pressure and cooking time were preset and taken care by the pressure cooker itself. So convenient and fuss-free.

Ingredients: yield 3 mini Nian Gao
材料

200g Glutinous Rice Flour 糯米粉 200克

110g Brown Sugar 黄糖 110克

50g Gula Melaka/ Palm Sugar 椰糖 50克

285g Water 水 285克

Traditionally eaten during Chinese festivities like birthdays, weddings, the Winter Solstice Festival and Chinese New Year, these round glutinous rice balls represent family togetherness and are thought to bring financial prosperity to those who eat them during the new year.

Available exclusively from Deliveroo Food Market on 31 January and 1 February with every order*, each three-piece set stars the first animal in the Zodiac, known for their intelligence, quick wit and fertility. All tang yuans are carefully designed and lovingly handmade by me, with each bowl featuring two adorably-designed mouse characters along with a mandarin orange. These tang yuans are filled with sweet red bean paste, pairing perfectly with a bowl of cool and fragrant pandan ginger syrup.

These old fashioned steamed layer cake are so popular in Malaysia. Just as delicious as they are decorative and perfect dessert for any occasion. I have so many memories of sitting at my Nanny’s table and eating these every Sunday. Every one of those memories is special to me. when I was a child, they were the ones I loved the most.

Ingredients
165g hot water
80g sugar
6 pandan
